Use this guide to understand our artisan methods, learn how to care for your fresh bakes at home, and see exactly what happens after you place a custom order.
🔬 Section 1: The Cookies & Crust Method
Why does your bread taste different and feel lighter?
We use a 24-to-48-hour slow fermentation process for our artisan loaves and completely ban commercial fast-acting yeasts. This extended resting time allows natural enzymes to break down gluten and phytic acid, making our loaves exceptionally gentle on your stomach and unlocking dense mineral nutrition without bloating.
How are your treats "Sugar-Free" and "Dairy-Free" without chemicals?
Unlike standard diet products that rely on chemical sugar alcohols (like erythritol) and synthetic thickeners, we use plant-derived monk fruit, whole-fruit reductions, and raw honey. For our dairy-free items, we harness the natural fats of cold-pressed coconut oil, avocado oil, and house-pressed nut butters.
How do you get vibrant colors without artificial food dyes?
We strictly ban synthetic dyes like Red 40 or Sunset Yellow. Our celebratory pinks come from organic beetroot extracts, our blues from natural blue spirulina, our deep greens from matcha or local herbs, and our golden glows from premium saffron threads and cardamom pods.
📦 Section 2: Storage & Product Care (Once Bought)
Because our kitchen uses zero chemical shelf-life extenders, our products are genuinely fresh and natural. Treat them with love using these care guidelines:
Artisan Loaves & Seed-Based Breads
Day 1–3: Store in a breathable brown paper bag or breadbox at room temperature. Never store bread in a plastic bag, as it traps moisture and ruins the rustic, crunchy crust.
Long-Term (Up to 3 Months): Slice your loaf completely, place it in an airtight container, and freeze it. Take out individual slices and pop them directly into the toaster for that fresh-baked, shattering crunch.
Fried Pastries & Savory Crisps (Churros, Beignets, Samosas, Spring Rolls)
Best Enjoyed: Immediately! Our pastries are fried in premium avocado and coconut oils for a clean, grease-free finish best experienced fresh.
Reheating: Never use a microwave—it will make the pastry rubbery. To restore the perfect crunch, heat your oven or air fryer to 160°C (320°F) and bake for 3 to 5 minutes.
Flourless Fruit Cakes & Ghanaian Confectioneries
Storage: Keep our flourless fruit cakes (Mango, Apple, Beetroot, etc.) and White Gold Toffee in an airtight container in the fridge for up to 5 days.
Serving Tip: Because we use real nut butters, cacao, and grass-fed dairy, cold temperatures will firm them up. For the ultimate velvety texture, let your cake slice sit at room temperature for 15 minutes before enjoying.
🎂 Section 3: Special Orders & Milestone Cakes (What to Expect)
When you hit Submit on our Custom Cake Consultation Form or place a special order, our artisan production pipeline begins immediately. Here is exactly what happens next:
Step 1: The Artisan Review (Within 24–48 Hours)
Our head baker personally reviews your event date, guest count, dietary selections, and design notes. Because we hand-craft everything from scratch, we match your request against our strict kitchen capacity to ensure your cake gets the undivided attention it deserves.
Step 2: Personalized Quote & Secure Booking
You will receive a direct email from our team with a personalized price breakdown tailored to your custom flavor profiles and structural tiers. This email will contain a secure payment link. Your date on our baking calendar is officially locked in once payment is received.
Step 3: Fresh Baking & Creation
We do not bake cakes days in advance and freeze them. Your milestone masterpiece is baked completely fresh to order using pure, unrefined whole-food ingredients right before your event.
Step 4: Collection & Transport Care
Transporting Your Cake: Always place your cake box on a flat, level surface in your vehicle—the floor of the front passenger seat or a flat boot space is ideal. Never transport a premium, fondant-free cake on someone's lap or a sloping car seat.
Temperature Control: Keep your car air conditioning running on cold during transport. Our real-butter and whipped coconut creams will soften if exposed to direct Ghanaian heat for extended periods. Keep the cake refrigerated until 30 minutes before your guests arrive!
⚖️ Section 4: Custom Orders Terms & Cancellation Policy
Because every custom milestone cake and specialized bulk order requires dedicated kitchen hours, specific ingredient sourcing, and personalized scheduling, we operate under a strict policy framework to maintain our high standards of quality.
1. Booking & Payment Policy
Securing Your Date: A custom order inquiry or consultation request does not guarantee a slot on our baking calendar. Your order is officially confirmed and scheduled only after full payment (or a designated non-refundable deposit) is received via our secure payment link.
Order Deadlines: Due to the long-fermentation and artisanal nature of our baking process, custom milestone orders must be finalized and paid for at least 7 days prior to the event date.
2. Changes and Modifications
Flavors & Dietary Adjustments: You may request changes to your cake flavors or dietary specifications up to 5 days before your scheduled pickup/delivery date. We cannot accommodate ingredient or design changes after this window, as your premium components will have already been prepared.
Size & Scale Changes: Increasing your cake size or adding tiers is subject to kitchen availability and will result in an updated invoice that must be cleared immediately. Decreasing order sizes within the 5-day window is not eligible for partial refunds.
3. Cancellation & Refund Policy
We understand that event plans can change. However, because we block out kitchen capacity and source fresh, organic ingredients specifically for you, cancellations are handled as follows:
Cancellations 7 Days or More Before Event: Eligible for a full refund or a 100% store credit voucher valid for 6 months.
Cancellations 3 to 6 Days Before Event: Eligible for a 50% refund, or a 75% store credit voucher. The remaining balance covers the cost of pre-sourced specialty ingredients and reserved kitchen slots.
Cancellations Within 48 Hours of Event: Strictly non-refundable. At this stage, your custom masterpiece is already in production or completed by our artisan baking team.
4. Collection, Delivery, and Liability
The Golden Transport Rule: Once a custom cake or pastry order safely leaves our premises or is successfully handed over by our designated courier, Cookies & Crust is no longer liable for any damage sustained during transit or due to improper storage.
Temperature Warning: Our natural frostings are made with real grass-fed butter or whipped coconut cream with zero chemical stabilizers. They will melt if left in a warm vehicle or exposed to direct heat. Please follow our Transport Care rules listed in Section 3 to ensure your cake stays flawless.
